  • 2 1/2 cups cake flour
  • 2 Tbsp unsweetened cocoa powder
  • 1 3/4 cups granulated sugar
  • 2 large eggs
  • 1 1/4 cups buttermilk
  • 1/2 cup vegetable oil
  • 1 tsp red gel food coloring
  • 1 1/2 cups butter (for frosting)
  • Seedless raspberry or strawberry jam

Instructions

  1. Preheat oven to 350°F (175°C) and grease two round baking pans.
  2. In one bowl, mix cake flour, cocoa powder, baking soda, and salt. In another bowl, beat butter and sugar until fluffy; add eggs one at a time.
  3. Alternate adding dry ingredients with buttermilk; then mix in oil, vanilla extract, vinegar, and food coloring.
  4. Pour batter into pans and bake for about 27 minutes until a toothpick comes out clean. Cool cakes before frosting.
  5. For the buttercream frosting, beat softened butter and cream cheese until smooth; gradually add powdered sugar followed by heavy cream and food coloring.
  6. Assemble the cake with layers of jam and frosting; decorate with piped frosting and extra jam.
