  • 1 cup light brown sugar
  • 1/3 cup pure maple syrup
  • 1 large egg yolk
  • 1/2 cup canned pumpkin (blotted and drained)
  • 2 tsp vanilla extract
  • 1/2 cup granulated sugar (for coating)
  • 1/2 tsp pumpkin or chai spice blend (for coating)

Instructions

  1. Make brown butter by melting in a saucepan over medium heat until golden brown, then let cool.
  2. Blot the canned pumpkin with paper towels to remove excess moisture.
  3. In a bowl, whisk together flour, spice blend, baking soda, and salt.
  4. Combine cooled brown butter, light brown sugar, and maple syrup in another bowl; mix well.
  5. Stir in egg yolk, blotted pumpkin, and vanilla extract until blended.
  6. Gradually add dry ingredients to wet ingredients until just combined.
  7. Chill dough for at least 8 hours or overnight.
  8. Preheat oven to 350°F (177°C) and line cookie sheets with parchment paper.
  9. Scoop chilled dough into balls, roll in spiced sugar mixture, and space them out on baking sheets.
  10. Bake for 12-14 minutes or until golden; let cool before transferring to a rack.
