  • red bell pepper
  • carrot
  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried herbs
  • 1 cup broccoli florets
  • 1 cup uncooked rice (basmati or jasmine)
  • 1 cup water
  • pinch of salt

Instructions

  1. Rinse 1 cup of rice until water runs clear. Combine rice, 1 cup water, and a pinch of salt in a pot. Bring to a boil, cover, and simmer for 12-15 minutes until fluffy.
  2. In a non-stick frying pan, heat 1 tsp olive oil over medium-high heat. Add sliced chicken and cook until golden brown (5-6 minutes). Mix in sliced carrots, red bell pepper, garlic powder, herbs, salt, and pepper. Stir-fry for an additional 3-4 minutes until veggies are tender-crisp.
  3. Steam 1 cup broccoli florets in a basket over boiling water for 4-5 minutes.
  4. Serve the stir-fry alongside fluffy rice and steamed broccoli.
