  • 1/2 cup pumpkin puree
  • 1/3 cup almond butter (or any preferred nut/seed butter)
  • 2 tablespoons honey (or maple syrup)
  • 2 teaspoons pumpkin spice
  • 1 cup chocolate chips
  • 1 tablespoon coconut oil

Instructions

  1. Place silicone muffin cups on a baking sheet.
  2. In a microwave-safe bowl, melt chocolate chips and coconut oil in 30-second intervals until smooth.
  3. Coat the bottom of each muffin cup with melted chocolate and freeze for 10 minutes.
  4. Mix pumpkin puree, almond butter, honey, and pumpkin spice until smooth.
  5. Spoon the pumpkin mixture into each cup over the hardened chocolate layer.
  6. Top each cup with more melted chocolate until fully covered.
  7. Freeze again for one hour until set.
  8. Gently remove from molds and enjoy!
