Ingredients

Scale
  • 1 lb beef stew meat
  • 2 tbsp vegetable oil
  • 1 large onion
  • 3 cloves garlic (plus extra for naan)
  • 1 tbsp fresh ginger
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 (15 oz) can chickpeas
  • 1 (13.5 oz) can coconut milk
  • 1 cup beef broth
  • Salt and black pepper to taste
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp baking powder
  • ½ cup plain yogurt

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Sauté chopped onion until translucent, about 5 minutes. Add minced garlic and grated ginger; cook for an additional minute.
  2. Add beef stew meat, season with salt and pepper, and brown on all sides for about 8-10 minutes.
  3. Stir in curry powder, cumin, and chickpeas; mix well.
  4. Pour in coconut milk and beef broth; stir in tomato paste. Bring to a gentle simmer.
  5. Cover and reduce heat to low; let simmer for 1 to 1.5 hours until beef is tender.
  6. For garlic naan, combine flour, salt, baking powder, yogurt, and minced garlic in a bowl until dough forms; knead briefly.
  7. Divide dough into portions; roll into flat circles and cook in a heated skillet for about 2-3 minutes on each side until golden brown.
  8. Serve hot garnished with fresh cilantro alongside warm garlic naan.
