  • 1.67 cups low-sodium chicken or vegetable broth
  • 3 tablespoons extra virgin olive oil
  • 1 small yellow onion (finely chopped)
  • 2 small carrots (peeled and diced)
  • 0.75 teaspoon dried thyme
  • 4 ounces shiitake mushrooms (sliced)
  • 2 cloves garlic (minced)
  • Salt and ground black pepper (to taste)
  • 0.33 cup chopped pecans (toasted if desired)
  • 0.25 cup chopped fresh parsley

Instructions

  1. Heat 1 tablespoon of olive oil in a medium saucepan over medium heat. Add onion and sauté for about 5 minutes until softened.
  2. Stir in diced carrots and thyme; cook for another 3-5 minutes until tender.
  3. Add sliced shiitake mushrooms and garlic; sauté for about 5-7 minutes until browned.
  4. Mix in rinsed quinoa and toast for 1-2 minutes while stirring.
  5. Pour in the broth; season with salt and pepper, then bring to a boil.
  6. Reduce heat to low, cover, and let simmer for about 15-20 minutes until quinoa absorbs all liquid.
  7. Remove from heat and let it steam covered for an additional 5 minutes.
  8. Fluff with a fork, stir in remaining olive oil, toasted pecans, and parsley before serving.
