Crockpot Lasagna Soup is a warm and hearty dish that combines all the comforting flavors of traditional lasagna into a delicious soup. This easy slow cooker recipe features tender pasta, savory ground beef, and rich tomato sauce, making it perfect for busy weeknights or cozy family gatherings.

  • 1 pound ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 28 ounces crushed tomatoes
  • 15 ounces tomato sauce
  • 4 cups beef or vegetable broth
  • 8 ounces uncooked lasagna noodles, broken
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a skillet over medium heat, brown the ground beef with diced onion until fully cooked. Drain any excess fat and transfer to the crockpot.
  2. Add minced garlic, crushed tomatoes, tomato sauce, broth, dried basil, oregano, salt, and black pepper to the crockpot. Stir well to combine.
  3. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  4. About 30 minutes before serving, add broken lasagna noodles to the crockpot and stir gently to ensure they are submerged in liquid.
  5. Once noodles are tender, ladle the soup into bowls and top with ricotta cheese and mozzarella. Garnish with fresh herbs if desired.
