  • 2 large hard-boiled eggs, sliced
  • 1 ripe avocado, diced
  • 1 cup cucumber slices
  • 1 cup cherry tomatoes, halved
  • 2 tbsp diced red onion
  • 1 cup fresh spinach leaves
  • 1 tsp olive oil
  • 1 tsp paprika
  • Salt & freshly cracked black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil the eggs for 9-10 minutes until hard-boiled. Cool under cold water, peel, and slice.
  2. In a serving bowl, layer fresh spinach as your base.
  3. Arrange cucumber slices, cherry tomatoes, diced avocado, red onion, and sliced eggs on top of the spinach.
  4. Drizzle olive oil over the assembled veggies and sprinkle with paprika, salt, and pepper to taste.
  5. Garnish with chopped parsley before serving.
