  • ¼ cup unsalted butter (melted)
  • 2 cups sharp cheddar cheese (shredded)
  • 1½ cups sour cream
  • 1 small yellow onion (diced)
  • 2 teaspoons garlic (minced)
  • ½ cup chicken broth
  • 2 large yellow onions (for crispy topping)
  • Vegetable oil (for frying)

Instructions

  1. Preheat the oven to 350°F and spray a 9×13-inch baking dish with nonstick spray.
  2. Sauté the diced onion in melted butter over medium heat until translucent; add minced garlic and cook until fragrant.
  3. In a large bowl, combine thawed hash browns, melted butter, sour cream, cheddar cheese, sautéed onions and garlic, chicken broth, flour, salt, black pepper, cayenne pepper, dried mustard, and whole milk. Mix well.
  4. Pour the mixture into the prepared baking dish and bake for about 50 minutes until bubbly.
  5. For the crispy topping: fry thinly sliced onions in vegetable oil until golden brown; drain on paper towels and sprinkle with salt.
  6. Top the baked casserole with crispy onions before serving.
