  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 tsp salt
  • 1 can (20 oz) crushed pineapple (with juice)
  • 1 cup chopped pecans (optional)
  • 1 cup sweetened shredded coconut (optional)
  • 1 package (8 oz) cream cheese, softened
  • 1 cup unsalted butter, softened
  • 3 cups powdered sugar
  • 23 tbsp pineapple juice (reserved from the can)

Instructions

  1. Preheat your oven to 350F (175C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine flour, sugar, baking soda, and salt.
  3. Stir in the eggs, vanilla extract, and crushed pineapple with its juice until well blended.
  4. Fold in chopped pecans and shredded coconut if desired.
  5. Divide the batter between the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool in pans for 10 minutes before transferring to wire racks to cool completely.
  7. For frosting, beat cream cheese and butter until smooth; gradually add powdered sugar and mix in vanilla extract and pineapple juice.
  8. Once the cakes are cool, layer them with frosting in between and on top.
