  • 1 chicken leg quarter (bone-in, skin-on)
  • 1 tsp olive oil
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • 1 clove garlic, minced
  • Optional: squeeze of lemon
  • 1 cup green beans, trimmed
  • 1 tsp olive oil or butter
  • 1 garlic clove, minced
  • Salt & black pepper to taste
  • 1 cup baby carrots
  • 1 tsp olive oil
  • 1 tsp honey or maple syrup
  • Pinch of salt & black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Rub the chicken leg quarter with olive oil, thyme, minced garlic, salt, and pepper. Place on a baking sheet and roast for 35-40 minutes until golden brown.
  2. Toss baby carrots in olive oil, honey (or maple syrup), salt, and pepper. Spread on another baking sheet and roast alongside the chicken for about 25-30 minutes, turning halfway through.
  3. In a skillet over medium heat, sauté minced garlic and green beans in olive oil (or butter) for about 6-8 minutes until bright and slightly blistered.
  4. Serve the roasted chicken hot with the garlic green beans and glazed carrots.
