  • 1 large egg
  • 2 garlic cloves, minced
  • 2 teaspoons Italian seasoning
  • Salt and pepper to taste
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 1 cup green beans, chopped
  • Fresh parsley, for garnish

Instructions

  1. In a medium bowl, mix together ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, Italian seasoning, salt, and pepper until combined.
  2. Shape the mixture into small meatballs about 1 inch in diameter.
  3. Heat olive oil in a large pot over medium heat and brown the meatballs on all sides. Remove and set aside.
  4. In the same pot, sauté onion, carrots, and celery for 5-7 minutes until soft.
  5. Add beef broth and diced tomatoes with their juices; stir well.
  6. Return the browned meatballs to the pot and bring to a gentle boil.
  7. Reduce heat and let it simmer for about 30 minutes while stirring occasionally.
  8. In the last 5 minutes of cooking, add chopped green beans.
  9. Adjust seasoning if necessary before serving.
