  • 1 cup pumpkin puree (plain)
  • 1/2 cup softened unsalted butter
  • 1/2 cup warm milk
  • 2 large eggs (room temperature)
  • 2 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/4 tsp kosher salt

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a round cake or loaf pan.
  2. In one bowl, mix flour, cinnamon, nutmeg, baking powder, baking soda, and salt; set aside.
  3. In another bowl, cream together softened butter and sugar using a hand mixer until fluffy.
  4. Add eggs to the butter-sugar mixture and mix well. Stir in pumpkin puree and vanilla extract until combined.
  5. Gradually add dry ingredients to the wet mixture, mixing gently until just incorporated.
  6. Pour in warm milk and mix until smooth.
  7. Transfer batter into the prepared pan and bake for about 45-55 minutes (check doneness with a toothpick).
  8. Allow cooling in the pan for about 15 minutes before removing.
