  • 1 1/2 cups old-fashioned oats
  • 1/2 cup raisins or chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and spices.
  3. In another bowl, cream softened butter with brown and granulated sugars until fluffy; mix in egg, vanilla extract, and pumpkin puree.
  4. Gradually combine dry ingredients with wet mixture; stir in oats and optional add-ins.
  5. Drop tablespoon-sized dough onto the baking sheet, spaced 2 inches apart.
