  • 1/2 cup pumpkin puree
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Salt (to taste)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon olive oil or butter
  • Optional: fresh spinach, cooked chicken, sautéed onions

Instructions

  1. In a small bowl, combine pumpkin puree, cinnamon, nutmeg, and salt.
  2. Heat a skillet over medium heat and lightly brush it with olive oil or butter.
