  • 1 lb ground beef
  • 1 white onion
  • 2 medium carrots
  • 2 celery sticks
  • 4 garlic cloves
  • 2 tbsp tomato paste
  • 1/2 cup apple vinegar
  • 1 and a 1/2 cups beef broth
  • 4 medium russet potatoes
  • 1/2 cup heavy cream
  • Salt & pepper to taste
  • Fresh parsley (for garnish)

Instructions

  1. Dice onion, carrot, celery, and mince garlic; peel and cut potatoes.
  2. Boil potatoes in salted water until fork-tender (15-20 minutes).
  3. In a skillet, brown ground beef over medium heat; add diced vegetables and cook until softened (5-7 minutes).
  4. Stir in minced garlic and tomato paste; cook until fragrant (1-2 minutes).
  5. Deglaze with apple vinegar; simmer for 1-2 minutes.
  6. Add beef broth and bay leaf; simmer on low for about 10 minutes.
  7. Mix in frozen peas and corn; adjust seasoning.
  8. Mash boiled potatoes with heavy cream, butter, and half the parmesan cheese until smooth.
  9. In a baking dish, layer meat mixture followed by mashed potatoes; create texture with a fork.
  10. Sprinkle remaining parmesan on top; bake at 400°F (200°C) for about 30 minutes until golden brown.
  11. Garnish with parsley before serving hot.
