  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 tbsp coconut oil
  • 1 large onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1/2 tsp cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) full-fat coconut milk
  • 1 tbsp tomato paste
  • Salt and pepper, to taste

Instructions

  1. Prepare all ingredients by chopping the onion, mincing the garlic, and grating the ginger.
  2. In a pan, heat coconut oil over medium heat and sauté onions until translucent. Add garlic and ginger; cook for another minute.
  3. Stir in the curry powder, turmeric, cumin, and optional cayenne pepper for about two minutes.
  4. Transfer the mixture to a slow cooker along with beef chuck, diced tomatoes, coconut milk, tomato paste, salt, and pepper. Mix well.
  5. Cover and cook on low for 6-8 hours or high for 4 hours until beef is tender.
  6. Serve over rice or with crispy fries.
