  • 2 pounds beef shoulder or beef butt, cut into chunks
  • 1 can (20 ounces) pineapple chunks, drained (reserve juice)
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon cornstarch
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a mixing bowl, combine reserved pineapple juice, soy sauce, brown sugar, garlic, ginger, salt, and pepper.
  2. Place beef chunks in the slow cooker and pour sauce mixture over them.
  3. Cook on low for 6-8 hours or high for 3-4 hours until beef is fork-tender.
  4. In the last hour of cooking, add drained pineapple chunks.
  5. To thicken the sauce, mix cornstarch with water until smooth; add to remaining liquid in a saucepan and bring to boil while stirring.
  6. Return beef and pineapple to the slow cooker and coat with thickened sauce.
  7. Garnish with chopped green onions before serving.
