  • 1 lamb shoulder (bone-in, approx. 45 lbs)
  • 6 cloves garlic, minced
  • 3 tbsp Dijon mustard
  • 2 tbsp whole grain mustard
  • 3 tbsp honey
  • 1 tbsp apple cider vinegar
  • 1/4 cup olive oil
  • Fresh rosemary and thyme for seasoning

Instructions

  1. Preheat oven to 325°F (165°C).
  2. Pat the lamb shoulder dry and rub with olive oil; season generously with salt and pepper.
  3. In a bowl, mix garlic, both mustards, honey, vinegar, rosemary, and thyme to create the glaze.
  4. Coat the lamb shoulder with half of the glaze using a basting brush.
  5. Place in a roasting pan and roast for about 4 hours, basting every 30 minutes with remaining glaze until tender.
  6. Ensure the internal temperature reaches at least 145°F (63°C). Let rest for 15 minutes before carving.
