  • 2 lbs beef chuck or stew meat, cut into bite-sized pieces

  • 1 tbsp vegetable oil
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tsp curry powder (or your favorite curry blend)
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp chili flakes (optional)
  • Broth or water for simmering

Instructions

  1. Season the beef with salt and pepper. In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Sear the beef pieces in batches until browned on all sides. Remove and set aside.
  2. In the same pot, sauté chopped onion until translucent. Add garlic and ginger, cooking until fragrant. Stir in curry powder, cumin, coriander, turmeric, and optional chili flakes.
  3. Return seared beef to the pot. Pour in enough broth or water to cover the beef. Bring to a simmer, cover with a lid, and reduce heat to low.
  4. Let the curry simmer gently for about 2 hours until the beef is tender. Stir occasionally and adjust seasoning as needed before serving.
