  • 3 medium cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon rice apple vinegar
  • 1/4 cup light brown sugar
  • 1/4 cup low-sodium soy sauce
  • 1/2 cup freshly-squeezed orange juice
  • 1 tablespoon grated orange zest
  • 11/2 to 2 teaspoons red pepper flakes
  • 2 lbs boneless skinless chicken thighs
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together garlic, ginger, vinegar, brown sugar, soy sauce, orange juice, zest, and red pepper flakes until well combined. Season with salt and pepper.
  2. Place chicken in a sealable bag or shallow bowl and pour marinade over it. Seal the bag or cover the bowl and marinate in the fridge for at least 2 hours or up to overnight.
  3. Preheat your grill to 400°F or heat a large skillet on medium-high. Remove chicken from marinade (reserve marinade).
  4. Grill chicken for about 6-8 minutes per side until it reaches an internal temperature of 165°F.
  5. Meanwhile, simmer reserved marinade in a small pan over medium heat for about 8-10 minutes until slightly reduced.
  6. Serve the grilled chicken drizzled with the reduced sauce.
