  • 1/2 cup dry white apple vinegar
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth or stock
  • 2 cups half-and-half, warmed
  • 12 teaspoons fresh thyme leaves, chopped
  • 1/2 teaspoon dried italian herb blend
  • 1 pound gnocchi (either refrigerated or shelf-stable)
  • 2 cups cooked rotisserie chicken breast, shredded or cubed
  • 2 cups fresh spinach, roughly chopped
  • 1/8 teaspoon freshly grated nutmeg (optional)
  • Salt and freshly ground black pepper to taste

Instructions

  1. In a large pot, heat butter and olive oil over medium heat. Sauté diced onion, carrots, celery, and garlic until softened.
  2. Add white apple vinegar to deglaze the pot, then sprinkle in flour while stirring.
  3. Gradually add chicken broth, whisking continuously to ensure no lumps form. Stir in warmed half-and-half.
  4. Season with thyme leaves, Italian herbs, salt, and pepper; simmer for about 10 minutes.
  5. Stir in gnocchi and shredded chicken; cook until gnocchi are tender (approximately 5 minutes).
