  • 1 1/2 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 8 tablespoons salted butter, at room temperature
  • 1/4 cup heavy cream
  • 1/2 cup packed dark brown sugar
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon cinnamon
  • 1 1/2 cups powdered sugar

Instructions

  1. Prepare the chai spice blend by mixing ground spices in a bowl.
  2. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  3. In a mixer, combine melted coconut oil, dark brown sugar, vanilla extract, eggs, and pumpkin puree until smooth.
  4. Add flour, baking powder, baking soda, salt, and half of the spice blend to the wet mixture; blend until no lumps remain.
  5. Fill cupcake liners evenly with batter and bake for 18-22 minutes until set.
  6. For frosting, melt butter, heavy cream, and dark brown sugar in a saucepan; cool before mixing in remaining ingredients.
